Zucchini Bread

I wanted to make a healthier version of the zucchini bread I once had from Trader Joe's, something I wouldn't feel too guilty about indulging in. 
This bread is moist and flavorful. One of my kids fav's!



  • 2 c. All purpose Flour
  • 1 c. Whole wheat flour
  • 1/2 tea. salt
  • 1 tea. baking powder
  • 1 tea. baking soda
  • 3 tea. cinnamon
  • 3 eggs
  • 1 c. oil
  • 1/2 c. apple sauce
  • 1 3/4 c. sugar
  • 3 tea. vanilla extract
  • 2-2 1/2 c. shredded zucchini
  • 1 c. chopped walnuts or pecans
  • Topping:
  • 1/2 c. oats
  • 1/2 c brown sugar
  • 1/4 c. flour
  • 1/4 tea. cinnamon
  • 1/4 c. butter softened

  • Pre-heat oven to 325.
  • In a lg. bowl combine both flour, salt, baking powder, baking soda and cinnamon. Set aside
  • In another bowl combine eggs, oil, apple sauce, sugar and vanilla stirring well. Mix together with dry ingredients.
  • Grease and flour two 8"x4"x2 1/2" loaf pan. Pour half of the mixture into each pan. Bake 50-60 minutes until a tooth pick inserted into the middle comes out clean.While loaf is cooking, combine the ingredients for the topping. The last 15 min. sprinkle topping over loafs. Enjoy!!!
