Zucchini Bread
I wanted to make a healthier version of the zucchini bread I once had from Trader
Joe's, something I wouldn't feel too guilty about indulging in.
This bread is moist and flavorful. One of my kids fav's!
- 2 c. All purpose Flour
- 1 c. Whole wheat flour
- 1/2 tea. salt
- 1 tea. baking powder
- 1 tea. baking soda
- 3 tea. cinnamon
- 3 eggs
- 1 c. oil
- 1/2 c. apple sauce
- 1 3/4 c. sugar
- 3 tea. vanilla extract
- 2-2 1/2 c. shredded zucchini
- 1 c. chopped walnuts or pecans
- Topping:
- 1/2 c. oats
- 1/2 c brown sugar
- 1/4 c. flour
- 1/4 tea. cinnamon
- 1/4 c. butter softened
- Pre-heat oven to 325.
- In a lg. bowl combine both flour, salt, baking powder, baking soda and cinnamon. Set aside
- In another bowl combine eggs, oil, apple sauce, sugar and vanilla stirring well. Mix together with dry ingredients.
- Grease and flour two 8"x4"x2 1/2" loaf pan. Pour half of the mixture into each pan. Bake 50-60 minutes until a tooth pick inserted into the middle comes out clean.While loaf is cooking, combine the ingredients for the topping. The last 15 min. sprinkle topping over loafs. Enjoy!!!
