Since having 4 kids, and a husband who can eat about 3 times the amount that I can, having things like breakfasts easy to get to make busy mornings less stressful. I like to take a day each month where I make and freeze tons of breakfast items. One of my fav's are these breakfast burritos. They're pretty easy to make, and they make a lot, so you'll have them on hand when in a pinch.
3 tabl. olive oil
1 bag frozen hash browns
8-10 XL eggs
1 1/2 lb ground Italian chicken sausage
3-4 c. shredded cheddar cheese
20 8" flour tortillas
Plastic wrap
LG freezer zip lock bags
In a large skillet, heat the olive oil over med. heat. place the entire bag of hash browns in, spreading them our well. Let them cook 3-4 min, stir, then cook 3-4 min, stir repeat until they have reached the desired golden brown color. Mean while scramble your eggs in another skillet (I have a 6 year "helper" who is phenomenal at making scrambled eggs) Once your eggs are finished, put them into a large mixing bowl along with your hash browns (when they're done) stir them up a bit.
Then back to the egg pan...or hash brown pan-your choice, Cook your sausage, and mix in with the egg dish (good time to sneak a bite of the sausage). Lay out your tortillas, and scoop a good amount onto the tortilla (not too much or it wont close, and not too little you'll have an angry mob) sprinkle about 2-3 tabl cheese on top, and roll up burrito style, and wrap tightly in plastic wrap. When you've finished warping up all the burritos, place in the zip locks and freeze.
To eat, take one out of the plastic wrap, and nuke in the microwave for 2 min. Check to see if you need another minute or two.
*You can serve them with salsa, hot sauce, sour cream, chopped tomatoes, cilantro...get creative!
